Taco Casserole

1 lb ground beef
1 can chili
1 can tomato sauce
1 can corn (drained)
1 tsp garlic salt
1 tsp chili powder
Cook beef and combine all ingredients. (frozen for you in a bag)

When ready to eat slighty crumble 2-3 cups tortilla chips in bottom of 9x13 pan. (Thaw above mixture first) Pour mixture over the top of chips. Put several dollops of sour cream over meat mixture. Sprinkle with cheese. Bake in 350' oven for 35 minutes.

Pork Chop Potato Casserole

1 can cream mushroom soup
1/2 c milk
3/4 c sour cream
1/2 tsp Lawry's seasoning salt
1/4 tsp. pepper
Combine above ingredients.
16 oz frozen hashbrowns (thawed)
1/2 c cheese
1 can French's fried onions
(Add potatoes, cheese, and 1/2 can onions)
Brown 3-4 pork chops in 1 T oil
Add chops to potato mixture in 9x13 pan. Cook for 40 minutes at 350'. Uncover, add rest of the can of onions and a sprinkle of cheese. Cook for 5 -10 more minutes.

Karen's Keoki Muffins

2 eggs
1 cup sugar
3/4 cup oil
1 cup pumpkin
1 cup finely grated carrots
1/2 cup coconut
1 1/2 cup flour
1/2 tsp salt
1 tsp soda
1 1/2 tsp cinnamon

Mix eggs, sugar, oil, pumpkin, carrots and cocomut with spoon until blended. Add flour, salt, soda, and cinnamon only until blended. put into muffin tins or loaf pan. Bake at a325 for 20-25 min. and 45 min for loaf pan

Chicken Noodle casserole

1 16oz pkg egg noodles
1/2 cup mayo
1/2 cup milk
1 can cream of chicken soup
1 large can chicken, drained
2 cups cheddar cheese, divided
garlic salt to taste
seasoned salt to taste
dash of pepper
1 small can French's onions

Cook noodles. Mix mayo, milk, soup, chicken. Season to taste. Drain pasta, stir into chicken mix. stir in 1 cup cheese. Put in pan. top with remaining cup cheese, and onions. Bake 425 20-25 min until bubbly.

If cooking from frozen, keep covered for the first half of baking...I found out it takes more than 25 min...more like an 45-hour. but you can cook from frozen!

Chicken Cordon Bleu

6-8 chicken breasts
6-8 slices ham
6-8 slices swiss cheese
1 can cream of chicken soup
1 cup sour cream
11/2 stack ritz
1 1/2 cube butter

Layer chicken on bottom of pan. Layer swiss cheese, then ham on each piece of chicken.
Mix soup and sour cream. pour over chicken.
Crush crackers and add melted butter. Crumble over top of soup layer.
Bake at 375degrees for 1-1 1/2 hours until chicken is cooked through.
Serve with rice.

You must thaw this completely or you will need to bake for up to 3 hours! sorry...
My family thought this was divine.

Chicken Enchilada Casserole

I guess Marcia and I were on the same wavelength. Hope you enjoy chicken enchiladas.

1 lb. chicken breasts
8 0z. sour cream
1 can cream of chicken soup
1 can diced green chiles
1 glug of milk
1 pkg tortillas
Shredded cheese--however much you like
seasoning salt and pepper

Cook chicken. Shred or chop into small pieces. Mix sour cream, chicken soup, green chiles, glug of milk, salt and pepper (and some cheese if you like cheese; if you don't then leave the extra cheese out). Reserve about 1 c of mixture to spread over top of tortillas later. Mix chicken in with remaining mixture. Spray 9x13 pan with Pam. Layer tortillas in bottom. Next put a layer of chicken, soup, sour cream mixture--continue layers like lasagna. Last layer should be reserved mixture without chicken. Sprinkle cheese on top. Cook at 350' for approximately 30-45 minutes until cooked all the way through.
If cooking from frozen, it does heat better if you let it thaw first, then cook it. Make sure you take off the layer of saran wrap so it doesn't cook into your food. You can also make these into actual enchiladas, but that takes a lot more time, so I like the casserole version. Some people like to eat it with rice, so if you like rice, you can add that to your meal

Sweet-N-Sour Pork Spare Ribs

3 lbs lean boneless spare ribs (pork or beef)
salt and pepper

Sauce:
1 c ketchup
1/2 c water
2/3 c pineapple juice
2/3 c brown sugar

Cut meat into chunks (whatever size your family prefers) and season with salt and pepper. Cook meat, covered, on 350' for about 1 1/2 hrs. Drain excess grease/juice. Mix sauce ingredients (if you like a lot of sauce, double the ingredients) and pour over meat. Cook an additional 30 minutes UNcovered until sauce thickens and is bubbly. Serve over rice.

chocolate chip muffins recipe

sorry about that--I am a blogger virgin--it's all new to me!
2 C flour
1/2 C white sugar
3 tsp baking powder
1/2 tsp salt
3/4 c milk (I'd do 1 c)
1/3 c vegetable oil
1 egg
(I'd add a tsp or so of vanilla)
3/4 c chocolate chips
3 T white sugar
2 T brown sugar

1. Heat oven to 400' F. Line tin with baking cups
2. Combine flour, 1/2 c sugar, baking powder, chocolate chips and salt; mix well. In a smaller bowl, combine mile, oil and egg (and vanilla); blend well. Combine wet and dry ingredients; stif just until dry ingredients are moistened (batter still lumpy)
3. Fill muffin cips. Sprinkle tops of muffins before baking with a combination of 3 T sugar and 2 T brown sugar.
4. Bake for 20-25 minutes (too long, I suggest about 18). Cool 1 minute before removing from pan. Serve warm.

Disclaimer: I don't do muffins--never have. But I gave it a go. Followed the recipe, but would tweak a few things next time like others suggest. Less cook time, add vanilla and maybe a little more milk. If you want to try to make them yourself, those are my suggestions.

White Chicken Enchiladas


1 can Cream of Mushroom Soup

1 can Cream of Chicken Soup

1 C chopped onion

2 C Sour Cream

12 Tortillas

4 C cooked chopped Chicken

2 C shredded Cheese


Mix everything but the tortillas. Fill tortillas with chicken and cheese mixture and place in a pan. (you can freeze them in a large ziplock bag instead). Cover. Bake (thaw before baking) 60 minutes at 350 degrees. Uncover- optional: top with extra cheese. Bake an additional 5-10 minutes. Serve with your favorite mexican sides (beans, rice, lettuce, salsa, sour cream, etc.).

MEAT AND POTATOES


1 1/2 pounds ground beef

3/4 cup evaporated milk

1/2 cup oatmeal

1/4 cup ketchup

1/4 cup chopped onion

1 t salt

1/4 t pepper

12 oz frozen hashbrowns (or other frozen potatoes)


Put potatoes in bottom of pan. Mix everything else and spread on top of potatoes.


To eat, thaw, then cook uncovered at 350 degrees for 45 minutes (or until hamburger is cooked through). Serve with ketchup.

Applesauce Muffins

1/2 cup butter, softened
1 cup sugar
1 egg
1 cup applesauce
2 cups flour
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. baking soda
1/4 tsp. salt
1/2 cup chopped nuts, optional

Preheat oven to 400 degrees. Line 12 muffin cups. In large bowl, beat butter and sugar until blended. Blend in egg and applesauce. In medium bowl, combine dry ingredients. Add to butter mixture. Stir in nuts, if desired. Spoon batter into muffin cups, fill 2/3 full. Bake 25 minutes, or until golden.

Beef & Cheese Quesadillas

1 lb. lean ground beef
1/2 cup chopped onion
3/4 cup chunky salsa
2 cups shredded cheese
10-12 flour tortillas

Brown beef with onion. Drain. Mix in salsa and cheese. If freezing, place meat mixture in a freezer bag. Include a package of flour tortillas with this meal. Otherwise, spoon approximately 1/2 cup of meat mixture on one half of tortilla. Fold tortilla in half to close. Arrange quesadillas on baking sheet. Lightly spray tops of tortillas with cooking spray. Bake at 450 degrees for 8 minutes or until lightly browned.

I am thinking that nothing I made is worthy of passing on...but to make matters worse- I can't remember what I made.

Bread- for a kitchenaid
8 cups of flour (ish)
3 cups of liquid- water or milk or mixed
1/2 c. sugar
3 tbls. yeast
1 tbls. salt
1/2 c. oil

raise warm liquid, sugar, and yeast in mixing bowl
until it triples in size.

add oil and 4 cups flour mix for abt 3 min.
add salt and remainder of flour until it pulls away from the side of the bowl and forms a ball. let it knead for a while.
remove dough from the bowl and cut into 3 parts. knead each section and then place each into it's own pan.
let raise under a towel...abt 20 minutes.
bake on 325 for 30 min.

BBQ Chicken

Combine chicken breasts/tenders with your favorite BBQ sauce. I use Sweet Baby Rays. Place in crockpot for 4 hours or cook in skillet until no longer pink. Serve with rice or potatoes cooked your favorite way.

Rhodes Rolls

Regular Method (3-5 hours): Coat a pan with non-stick spray. Place frozen dough in pan and cover with plastic wrap coated with spray. Let rolls rise 3-5 hours, until double in size. Carefully remove plastic wrap. Bake at 350 degrees 15-20 minutes, until golden brown.

Speed Method (1.5 hours): Coat a pan with non-stick spray. Place frozen dough in pan. Do not cover. Preheat oven to 200 degrees, then turn oven off. Boil 1-2 quarts of water in a shallow pan and place pan of water on lower rack in oven. Place rolls on upper rack in oven. Let dogh rise about 1 hours, until double in size. Watch closely so dough doesn't rise too high. Remove pan of water. Leave dough in oven and set to 350 degrees. Bake 15-20 minutes, until golden brown.

I use the speed method a lot when I don't plan ahead enough. It works great!

Cheddar Broccoli Soup

*This recipe will make enough for two famillies

1 (16 oz.) pkg. frozen broccoli
6 carrots, sliced
4 stalks of celery, sliced
1 medium onion, chopped
3 cubes butter or margarine
1 1/2 cups flour
10 cups water
10-12 chicken bouillon cubes
1 (16 oz.) container Cheez Whiz or Velveeta cheese

Steam vegetables until almost tender. In a separate bowl, microwave butter or margarine until melted. Stir in flour and mix until smooth. In a large saucepan, dissolve bouillon cubes in boiling water. Add a cup of bouillon water to the butter and flour and whisk together. Then add to boiling water and stir. Add drained vegetables to soup. Add Cheez Whiz or Velveeta cheese. Stir until melted. If freezing: cool, then put in a freezer bag. Lay flat in freezer. Otherwise, serve when hot.

Lasagna

--April

1 pkg. lasagna noodles
1 bottle prego
1 lb hamburger
18 oz cottage cheese
Mozzerella cheese

Cook hamburger. Add prego. layer sauce, noodles, cottage cheese, mozzerlla cheese 3x's. top with cheese. Bake 375 degrees, 30-40 min or until bubbly.

The freezer book swore I didn't have to cook the noodles first if I was freezing it...let me know if it worked, or if I should sue...

Beef Stroganoff

1/4 cup butter
1/2 cup minced onion
1 lb. ground beef
1/2 tsp garlic salt
1 1/2 tsp. salt
1/4 tsp petter
1/4 tsp paprika
2 Tbls. flour
1can cream of mushroom soup
1 cup sour cream

Saute onion and hamburger in butter. Stir in flour. mix well. Add other spices. Add 1 can cream of mushroom soup and cook uncovered for 10 minutes.
Remove from heat and stir in sour cream. Serve over noodles, rice or biscuits.
